Introducing Edwina!
Eddie is one of our co-founders and has been in a full-blown baking phase since welcoming her new baby. With strawberry season in full swing, she’s been picking up punnet after punnet and finally decided to share her go-to recipe for scones and homemade strawberry jam, plus a little bonus cocktail, because this season's strawbs' are simply too good not to use.
The sky was clear, the sun was out, and we were in a high-tea kind of mood. Here’s how to bring it to life at home.
Scones
Soft, buttery and fresh from the oven, these never last long.
Ingredients
250g plain flour
½ tsp salt
1½ tsp baking powder
1 tbsp sugar
113g cold butter
½ cup cream
1 egg
1½ tsp vanilla
Method
1. In a large bowl, combine flour, salt, baking powder and sugar.
2. Grate the cold butter straight in, then rub it through with your fingers until it looks like damp sand.
3. In another bowl, whisk the cream, egg and vanilla. Pour into the flour mix.
4. Stir gently, just until the flour disappears (no over-mixing here).
5. Bring the dough together, fold once or twice, then flatten into a disc (1-2 inches thick).
6. Wrap and chill for at least 30 minutes, or overnight for a morning bake.
7. Preheat oven to 200°C. Slice into 8 wedges, brush with cream and bake 15-18 minutes, until golden.
8. Serve warm with jam and cream, preferably in the sun.
Homemade Strawberry Jam
Less sugar, more berry. Sweet, bright and full of flavour.
Ingredients
1kg strawberries
2 cups white sugar
¼ cup lemon juice
Method
1. Wash, hull and halve your strawberries.
2. Add everything to a large pot and cook low and slow until the sugar melts.
3. Mash gently, then bring to a rolling boil for 15-20 minutes.
4. Test a spoonful on a cold plate, if it thickens up, it’s ready.
5. Spoon into jars and let cool. Store in the fridge until ready to use.
Bonus Cocktail: Ink Strawberry Jamz
Because jam this good should be drunk straight out of the jar!
Ingredients
15ml homemade strawberry jam
30ml lemon juice
60ml Ink Sloe & Berry Gin
Soda water, to top
Method
1. Shake jam, lemon juice and Ink Sloe Gin with ice.
2. Strain into a tall glass, pressing the jam to release all that flavour.
3. Top with soda water and garnish with edible flowers.
Serve your warm scones with jam and cream, sip your Strawberry Jamz on the side, and call it the perfect afternoon tea, with a twist.
A farm in the backyard would be dreamy… but really, all you need is a patch of sunshine.
