Our original gin. Modern Australian flavours with bold citrus notes of lemon myrtle and sweet orange, followed by warm pepper berry and soft pea flower. A curious deep indigo hue mixes to blush pink with the addition of tonic, sparking conversation wherever it pours.

Paul wanted to make a gin. But being an unknown distiller clattering around a small farm shed in Northern NSW, he knew he had to do something truly different to make his gin stand out.
After a global journey of botanical discovery, he came across an exotic flowering legume from Thailand, used for centuries in herbal teas and traditional medicine. This flower was the butterfly pea, and after buying seeds online he grew 3 pea vines in the family backyard in Brisbane.
Paul experimented infusing different liquids with the flower petal and the eureka moment came when the earthy flavoured deep indigo tea changed colour from blue to pink when mixed with tonic water. He had found the hero botanical of Ink Gin.
After 3 years of recipe development, in 2014 Paul settled on the final botanical blend, featuring 12 other native, traditional & exotic botanicals in perfect harmony with the flower. The recipe was locked, the gin tasted and looked incredible, and in a world of clear multi-national gin brands we were nervously ready to turn the most traditional spirit upside down.
It was now up to the people to decide it they loved it or hated it…
Ink Sloe & Berry Gin
AUSTRALIAN SLOE GIN
Our jammy gin, all-natural and steeped with sloe & seasonal red berries, luscious plums and native rosella flowers, imparting rhubarb notes to this perfectly balanced sweet & tart sloe gin.

Harriet loves the traditional English sloe gin style of liqueur. After much nagging to Quentin, he obliged and created Ink Sloe & Berry Gin.
This is Quentin’s least favourite spirit to make - it’s the most difficult. Hundreds kilos of berries go into each batch, and they need to infuse for several months. Every time we bottle Ink Sloe & Berry Gin we burn through production filters as the heavy fruit sediment clogs up the system.
It’s all worth it in the end, for anyone can slowly sip this smooth, sweet & tart baby neat or on the rocks. It’s lip smackingly good.

Our contemporary gin. A bright, balanced & contemporary gin with bold strokes of juniper, splashes of fresh fruit and flashes of fragrant flowers. The recipe is inspired by the classic still life forms of fruit & flowers, this versatile and velvety smooth ambrosial gin celebrates the confluence of art and nature. Limited edition label art features Australian artist Natalie Yates.

We wanted to make a creative & colourful clear gin, with a versatile juniper backbone. Drawing inspiration from classical still life portraits of fruit bowls, portrayed by generations of artists, Quentin started playing with a creative recipe based around fruit & flowers. He quickly learnt that fruit is very challenging to work with, which is why they are rarely used. After much trial and error, he settled on peach and green apple, combined with rose and lavender. The resulting gin is simply beautiful.
Husk Farm Distillery lies in a highly artistic community in northern NSW where the art scene is a backbone of the community. With our first crystal-clear gin we suddenly had a blank canvas on the back of the bottle, so it seemed natural to feature an Australian artists on the label. Every year or so we’ll run the Ink Art Competition to select a new winner to showcase on our bottle canvas.
Ink Bitter Orange Gin

Made with negroni's and sun-drenched aperitifs in mind, Ink Bitter Orange Gin is our richest, biggest and boldest gin yet. With a huge botanical basket starred by a melange of oranges - bitter, sweet, rescued and peel - Ink Bitter Orange is rich in round citrus oil and shines in drinks. Bitter Orange is highly versatile, with it’s approachable palette working beautifully in all classic cocktails.

There has been a beautiful return to nostalgia in recent years. Simple drinks, simple flavours, martinis and negronis are back baby!
We had been thinking for a while that we’d love to have a gin in the Ink range that is bigger and bolder, with deeper base flavour notes perfectly suited to the negroni.
Ink Bitter Orange Gin started out as an idea to bring the sophistication of the bitter orange fruit into a spirit which was accessible, versatile and nostalgic.
Quentin started playing around with lots of citrus varieties and the usual slow (painful!) process of product development began. Samples were everywhere, and office staff were presented at their desks with various unmarked sample glasses. We hope you love the result of all this hard work!
