Ink Gin is the original all natural, colour changing gin. After distillation with 12 delicious botanicals, led by native lemon myrtle, orange peel and juniper, we steep Ink Gin with the unusual and specially prepared butterfly pea flower, which releases it’s natural floral ‘ink’ and a soft green tea flavour. Normally used in herbal tea, the flower is pH sensitive, mixing from indigo to blush pink when you add tonic water, lemon or lime, to make the world’s most beautiful drinks.
Please note the colour of Ink Gin is 100% natural, with no artificial stabilisers. Organic colours fade over time. Enjoy your bottle sooner rather than later.

Paul wanted to make a gin. But being an unknown distiller clattering around a small farm shed in Northern NSW, he knew he had to do something truly different to make his gin stand out.
After a global journey of botanical discovery, he came across an exotic flowering legume from Thailand, used for centuries in herbal teas and traditional medicine. This flower was the butterfly pea, and after buying 5 seeds online for $5, he grew a few pea vines in the family backyard in Brisbane.
Paul experimented infusing different liquids with the flower petal and the eureka moment came when the earthy flavoured deep indigo tea changed colour from blue to pink when mixed with tonic water. He had found the hero botanical of Ink Gin.
After 3 years of recipe development, in 2014 we settled on the final botanical blend, featuring 12 other native, traditional & exotic botanicals in perfect harmony with the flower. The recipe was locked, the gin tasted and looked incredible, and in a world of clear multi-national gin brands we were nervously ready to turn the most traditional spirit upside down.
It was now up to the people to decide it they loved it or hated it….
