RECIPE: Blackberry Bramble (with an Inky twist!)

 

Valentine’s Day is almost here, and we’ve got just the thing for you to whip up that has serious WOW factor. This is on the menu at Hurricane’s in Sydney, and after we begged them to give us the recipe, we’re excited to share it with you.

Now be warned - this recipe is EXTRA. But we have complete faith in you - just follow the instructions!

 
 
 
 

Blackberry Bramble Twist Cocktail

Ingredients (for 1 serving):

  • 45ml Ink Gin

  • 20ml Elderflower liqueur (like St-Germain)

  • 10ml rose syrup

  • 20ml Fresh lemon juice

  • Blackberry foam (for topping)

Method:

  1. Add the Ink Gin, elderflower liqueur, rose syrup, and fresh lemon juice into a cocktail shaker.

  2. Fill the shaker with ice and shake well to chill.

  3. Strain the mixture into your choice of glass (a rocks glass or coupe works perfectly).

  4. Top with a generous layer of blackberry foam.

  5. Optional garnish: Fresh blackberries or a sprig of mint for that finishing touch.

How to make the Blackberry Foam (prep for 2 servings):

  • 100g Fresh blackberries

  • 2 teaspoons Sugar (or to taste)

  • 30ml Aquafaba (chickpea water) or egg whites (depending on preference)

  • 1/2 teaspoon Lemon juice (optional, for extra tartness)

Method for Foam:

  1. Blend the blackberries with the sugar until smooth.

  2. Strain through a fine mesh sieve to remove the pulp, leaving just the juice.

  3. In a separate mixing bowl, whisk the aquafaba (or egg whites) until soft peaks form.

  4. Gently fold the blackberry juice into the whipped aquafaba/egg whites until well combined.

  5. Spoon or pour the foam generously on top of the cocktail.

This recipe gives you a smooth, floral drink with a touch of tartness from the lemon and the beautiful deep purple foam on top. Perfect for a sophisticated twist on a classic!
